Ingredients

Potato Starch, Cornstarch, Brown Rice Flour, Tapioca Starch, Sorghum Flour, Whole Grain Corn Flour, Evaporated Cane Syrup, Baking Powder (Cornstarch, Sodium Bicarbonate, Sodium Aluminum Phosphate, Calcium Sulfate, Monocalcium Phosphate), Sea Salt, Xanthan Gum, Soy Flour.

Directions

Store in a cool, dry place and use by date stamped on package. HOW TO MAKE: Cooking times may vary depending on equipment. Pancakes (makes about five 4-inch pancakes): You will need: 1 cup baking mix, 1/2 cup milk, 2 Tbsp vegetable oil, 1 large egg. 1. Whisk milk, oil and egg together in bowl. Add baking mix; stir with wire whisk or fork just until large lumps disappear. DO NOT OVERMIX. Allow batter to rest 10 minutes. 2. Preheat griddle or non-stick skillet to 375 degrees or MEDIUM-HIGH. 3. Pour batter in 1/4 cupfuls onto lightly greased griddle or skillet. 4. Cook until pancakes bubble and bottom is golden brown, about 1 minute per side. Turn only once. Tip: For thicker pancakes, use a little less milk. For thinner pancakes, use a little more milk. Waffles (makes about three 6 1/2-inch round waffles): You will need: 1 1/4 cups baking mix, 3/4 cup milk, 3 Tbsp vegetable oil, 1 large egg. 1. Whisk milk, oil and egg together in bowl. Add baking mix; stir with wire whisk or fork just until large lumps disappear. DO NOT OVERMIX. Allow batter to rest 10 minutes. 2. Preheat waffle iron according to iron directions. 3. Cook according to iron directions or until steam slows and waffle is golden brown. Remove carefully. Drop Biscuits (makes 5-6): You will need: 1 cup baking mix, 3 Tbsp shortening, 1/4 cup milk, 1 large egg. 1. Cut shortening into baking mix with pastry blender or fork until it forms pea sized crumbs. Set aside. 2. Whisk milk and egg together in bowl. Stir into baking mixture until large lumps disappear. DO NOT OVERMIX. Dough will be soft. Allow to rest 10-15 minutes. 3. Preheat oven to 400 degrees with rack in center. 4. Drop by rounded tablespoonful onto lightly greased baking sheet about 2-inches apart. 5. Bake 13-16 minutes or until golden brown. Gluten Free Pan Searing Flour (make 1/4 cup): You will need: 1/4 cup baking mix, 1/4 teaspoon salt, 1/4 teaspoon white or ground black pepper. Mix all ingredients. Chef Tip: Ingredients for pancakes, waffles and biscuits can be easily doubled for additional servings.
